Our wine cellar is out in the country, located in the heart of the estate and surrounded by vineyards. Is a typical Andalusian farmhouse located in the town of Caniles . It is built on 3 levels, 2 of which are underground which means that we can firstly work in accordance with gravity, making it easier to decant, and secondly to maintain a stable temperature and humidity throughout the year; ideal conditions for the production and ageing of the wines.
We always pick by hand, selecting the grapes out in the vineyard and transporting them in 12kg boxes to the wine-cellar where they undergo secondary control on the selection table. The bunches are destemmed and the grapes are gently pressed before or after fermentation, depending on the type of wine we are making. In the lowest part of the cellar, the wine ages in 300-litre barrels of a number of different cooperages. The finished wines are filtered gently and then bottled manually.
The guided tour includes a stroll through the vineyards during which explanations will be given about the different varieties of local grapes, our traditional processes and the organic cultivation of vines.
