Description
Published byQuesería Cortijo La Vicaría, located in the municipality of Puente de Génave, in the heart of the Sierra del Segura in Jaén, produces handmade artisan cheeses. Their products are made from fresh, all-natural milk, with edible rinds, from free-range livestock. Workers collect the milk daily from the Florida breed goats that graze in the surrounding area of the cheese dairy.
Antonio Pérez, an agricultural engineer, is in charge of managing and producing the cheese. His project reflects his desire to start his own business and build a professional career in his family’s hometown, Puente de Génave, where the cheese dairy is open to the public for anyone who wants to discover the secrets of crafting award-winning artisan products known for their quality.
He offers guided tours of his cheese factory, where you will learn about the process of making different varieties of cheese, from fresh to aged. After the visit you will enjoy a guided tasting of 7 varieties of cheese accompanied by other artisanal products from the mountains, such as honey or EVOO with Designation of Origin Sierra de Cazorla. It is also possible to take part in group workshops on making fresh cheese, and you can buy the cheese you sample directly from the producer.
